The chef who followed Gordon Ramsey as a winner of the Craft Guild Chef of the Year, Steve Love, has designed the first two courses for this year’s informal pre-Catersummit dinner.

The dinner will be presented by Unilever Foodsolutions as a showcase for its Craft Guild sponsorship and its Culinary Services Team’s expertise.

Held at the Cheswick Grange Hotel, Kenilworth, on October 3, the evening before the Catersummit conference day, Steve’s dishes will be followed by a dessert from the Culinary Services Team.

Steve will prepare leek and ginger soup with a tortelloni nicoise, followed by roast fillet of beef with a shallot tatin and redcurrant and ruby port jus. Dessert will be lemon torte.

Vegetarians will be served saffron and sultana cous cous with aubergine caviar and fine herbes rressing.

“The menu is a great balance of traditional and contemporary skills,” said Unilever Foodsolutions.

Catersummit, presented by the Federation of Wholesale Distributors, is the biggest wholesale/foodservice market event in the calendar.
