Lyons Seafood has launched sustainably sourced, whole cooked Claw Island Lobster.
The lobster is cooked and frozen using a patented 'sealock' technique and the individual portions are 454g.
The individually packaged lobsters have a 12-month shelf life and chefs can defrost what they need, cutting down on wastage.
No chemical additives or preservatives are used in the cooking or freezing process.
Paul Murray, foodservice director, said: "The trend for consumers to trade-up remains stronger than ever and when it comes to seafood, lobster is king. Demand in the US has reinforced this status but at the same time made it difficult for the UK to embrace it as a menu staple due to cost and availability issues. But supply is now outstripping demand in the States and this presents a massive opportunity to UK chefs."
